Anyway, this is delicious. It's technically a breakfast recipe, but I think it's good anytime. We made these once for a lazy Sunday breakfast, and then had them last week for dinner, with a vegetable and fruit salad. And double bonus, they make good leftovers.
8-10 slices bacon
1 1/2 cups grated cheddar cheese (because we all grate by hand, right? none of that icky pre-shredded)
1 tsp salt
1 cup flour
1 1/4 cup milk
2 tbsp butter, melted
Preheat your oven to 450 degrees
If it's not already cooked, cook your bacon. (I prefer to fry it, but do the microwave or oven if that's your preference.) Then chop/dice it into small pieces. Set aside.
In a large bowl, combine the salt and flour.
In a medium sized bowl, stir together the milk, 2 eggs, and melted butter. Pour the egg mixture into the flour and stir together until smooth.
Grease a 12 cup muffin pan with butter. (Or spray with pam, if that's how you roll.)
Spoon about 1 tbsp of diced bacon into each muffin cup.
Add about 1 1/2 tbsp of the grated cheese into each muffin cup.
It'll look a bit watery, but no worries. Deliciousness awaits you!
Bake for 15 minutes at 450 degrees, then reduce the oven temperature to 350 degrees. Continue baking for another 15 minutes. During baking, don't open the oven at all! While baking, your popovers will pop up and rise, and opening the oven will cause them to fall.
Cool for just a moment, and serve warm! These were a hit with my hubs, with my kiddos, and to a few brunches and breakfasts I've brought them to.
I've made these many times now with cheddar and bacon, but I'd really like to try other combinations. I could see using crumbled sausage or diced ham working really well. Also, different cheeses would be fabulous; like gouda, greyere, parmsean, etc.
Besides the 30 minutes in the oven, the popovers come together really quickly if you've already cooked your bacon and shredded your cheese.
