Pumpkin Spice Cookies

mmm, pumpkin. Pumpkin baked goods are one of my most favorite things. Pumpkin muffins, pumpkin cookies, pumpkin loaves, pumpkin rolls...I like them all. Pumpkin treats are definitely one of the best things about autumn.

With that said, allow me to share with you the easiest pumpkin recipe ever. The easiest cookie you'll ever make. And these are totally adaptable too, so feel free to customize them to your preferences. 

Here's what I used:
One box of cake mix, and one can of pumpkin.
Stir the cake mix and the pumpkin together to form a dough.
Spray the cookie sheet with nonstick spray, and drop big spoonfuls (think about the size of a golf ball) of dough onto the cookie sheet. The dough will be thick and sticky and you'll want to try and spread it out a bit. While baking, the cookies won't spread or flatten at all, so however the dough looks before you bake, your cookies will look when it is done. You're not going to end up with round, picture perfect cookies.
As you can see, I made some of my cookies plain, and with half of the dough, I stirred in chocolate chips. Feel free to use semi-sweet, milk chocolate, white chocolate chips, or even nuts.

Bake at 350 degrees for 15-17 minutes.

While your cookies are baking, survey the mess your little helper has made in the kitchen.

Allow the cookies to cool on the cookie sheet. The cookies are soft and cakey, so I wouldn't recommend cooling them on a rack.

  2. We're not huge pumpkin fans (can we still be friends?) but I like a good pumpkin somethin' somethin' every now and then. Little Miss A seems to go for this kind of thing. As easy as this is, might as well give it a whirl.

  3. I found that recipe on Pinterest and made the cookies the very next day! And they did NOT disappoint, so delicious! And I'm sure they tasted even better with the mess from your kitchen helper :)

  4. They look delish! Made the Brown Butter Pumpkin cupcakes from Sprinkle Bakes over the weekend. OMG!!!! I couldn't stop eating them. I gave them away to anyone who dropped by just to get them out of my house. You should check them out. And my kitchen helper was just a cute as yours!! Don't 'cha just love little girls!!
